chicken fried rice

We had lots of leftovers from a dinner a few nights ago, so I thought this would a be a good way to use them. It's super simple (and probably not very authentic) but it was still yummy.




Chicken Fried Rice

1/2 T olive oil
2 cloves chopped garlic
2 cups cooked rice (mine was brown rice)
1 T soy sauce
1 cup chopped cooked chicken breast (mine happened to be teriyaki flavored)
1 egg, beaten well
1 cup peas (if they're frozen, thaw them first)

Heat oil in saucepan, add garlic, rice, and soy sauce, and let rice heat up and get a little crispy. Add chicken and egg, stir well and let egg cook through. Add peas just before serving.

turkey taco muffins (from the Biggest Loser)

It's sort of embarrassing to admit that I do the Biggest Loser workout DVDs, but they're a good workout! It's not like I paid for them, I just got them from the library. Plus, they had some good recipes on the disc. I made these for dinner last night, and Geoff and I both liked them.

Turkey Taco Muffins

1 package turkey sausage links (should be 12), cooked, drained, cut in half
4 corn tortillas, cut into six wedges each
6 eggs, beaten, or 1 1/2 cups egg substitute (I used the substitute)
salsa
cheese

Spray muffin tin with cooking spray. In each cup: place two wedges of tortilla. Top with two pieces of sausage, a spoonful of salsa, and enough egg to fill the cup 3/4 full. Sprinkle with cheese. Bake at 375 for 20 minutes or so, or until eggs are cooked through.
