This is one of those awesome quick and easy dinner recipes that is just perfect for a busy night! I don't know about you, but between work and kids and life, it feels like every night is a busy night. It's pretty rare now that I make anything very complicated for dinner, but this recipe is beyond simple: you basically just mix a few ingredients together, pour the sauce over the chicken, and bake. Easy peasy! I whipped up some quick coconut rice to go with it, and they were great together! Beyond the chicken's simplicity, though, it's also really tasty, and the sauce makes the chicken perfectly juicy. I love the sweetness and tanginess of the sauce in contrast with the savory chicken and the creamy rice. Yum!
