We've had a long stretch of warm sunny weather here in Portland lately, and it's making me so excited for summer! My kids still have a few more weeks of school (thanks to the ridiculous amount of snow days they had this winter), but I'm already making some fun plans for the summer break. They'll have a week of day camp at the rec center near us, but I'm planning to do an informal summer camp at home for them during the week. Each week we will have a theme and do activity and outings around that theme. I'm really excited for it! Last summer was pretty busy, with moving to a new state, so I'm excited to have more time for fun this summer.

One thing we'll definitely be doing this summer is making a ton of freezer jam! There are roadside fruit stands all over the place here, and I'm excited to buy all the fresh fruit we can eat, and freeze the rest. This summer fruit freezer jam is so easy to make, takes only about thirty minutes, and allows you to enjoy that gorgeous summer fruit all winter long. I love the combination of strawberries, raspberries, and peaches, but it would work with pretty much any combination of fruit. It's super delicious and perfect on toast, biscuits, pancakes, or peanut butter sandwiches. It's a favorite at our house, and I'm positive you will love it too!

Summer Fruit Freezer Jam

2 cups strawberries, diced
1 cup fresh peaches, peeled and diced
1 cup fresh raspberries
1 cup unsweetened apple juice or water
4 1/2 tablespoons low sugar pectin
1 1/2 cups sugar

Clean 6 half pint canning jars, lids, and bands and allow to air dry. In a large pot, combine the strawberries, peaches, and raspberries (you should have four cups of prepared fruit total). Mix in the apple juice and pectin and stir to break up any lumps in the pectin. Bring the mixture to a full rolling boil over high heat, stirring constantly. Stir in the sugar and return the mixture to a full rolling boil, continuing to stir constantly. When the mixture reaches a full boil, allow to boil for one minute, then remove from heat. Ladle into clean jars, leaving 1/4 inch at the top of each jar for the jam to expand. Place clean lids and bands on the jars, and allow to cool. Refrigerate overnight, then freeze.

Homemade Cherry Turnovers + 23 Fantastic Cherry Dessert Recipes

Today is National Cherry Dessert Day! I have to say, when I'm thinking of a fruit dessert, cherries are generally pretty low on my priority list. I'm crazy about strawberries and peaches, so they are usually my fruits of choice. Cherries are a lot more work, since you have to pit them, and usually they're so expensive that we only buy them a few times each summer. I'm also not a big fan of cherry pie filing, so I was pretty stumped as to what to make for my cherry dessert this month. A couple of weeks ago we took a drive to the coast, and I was totally thrilled to see my first roadside stand of the season! They were selling fresh cherries, and I knew it was fate. We picked up a couple of pounds (and paid a ridiculous price) and I brought them home to make these cherry turnovers. 

These flaky and sweet cherry turnovers are bursting with fresh cherries and drizzled with a sweet almond glaze. Perfect for breakfast, brunch, or dessert!

These turnovers are so simple and easy to make! I used pre-made puff pastry (although you can make your own if you have the time and patience) and made a quick cherry filling on the stove. After they baked, I drizzled them with a sweet almond glaze, and they were perfect! I think my husband ate four of them in the same day. :) They would make for a delicious snack, easy breakfast, or simple dessert. You definitely have to try them!

Homemade Cherry Turnovers

1 1/2 cups fresh cherries, pitted and cut in half
1/4 cup sugar
2 tablespoons corn starch
pinch of salt
1 teaspoon lemon juice
1/4 cup water
1 sheet puff pastry, thawed according to package directions
1/2 cup powdered sugar
1/2 teaspoon almond extract
2 teaspoons milk or half and half (more or less as needed)

In a small saucepan, stir together the cherries, sugar, corn starch, salt, lemon juice, and water. Bring to a simmer over medium heat, stirring frequently. Cook 3-4 minutes, or until thickened. Remove from heat and let cool to room temperature.

Preheat the oven to 400. Line a baking sheet with parchment or a silicone liner. Roll the puff pastry out and cut into six squares. Put 2 tablespoons of the filling in the center of each square, and fold in half to make a triangle. Pierce the top with a fork to let steam escape. Place on the baking sheet and repeat with remaining squares of dough. Bake 15-20 minutes or until lightly browned, then let cool.

While the turnovers are cooling, whisk together the powdered sugar, almond extract, and milk, adding more or less as needed to reach desired consistency. Pour the glaze into a plastic bag or piping bag, snip a small piece off the corner of the bag, and drizzle over the turnovers.

Okay, I have to ask: how often does your family eat pizza? I'll confess that my family probably eats pizza at least once a week. I try to keep things a little healthier by serving homemade pizza most of the time, but we also have a few favorite local pizza places that we can't get enough of. Pizza is definitely one of my husband's favorite foods, and it's probably at least in my top ten (I just happen to love lots of different foods!). My kids can't get enough pizza either! 

If you, like our family, love pizza, then you will love these quick and easy pizza pockets. They're like mini-calzones, and perfect for a quick lunch or easy dinner. I like to make a double batch and keep them in the freezer so I can pull them out as needed. My kids love these and could eat them every day. They are definitely a family favorite!

Quick and Easy Pizza Pockets

1 cup warm water
1 tablespoon yeast
1 tablespoon sugar
2 cups flour
1 teaspoon kosher salt
1 tablespoon olive oil
3/4 cup pizza sauce
1 1/2 cups shredded mozzarella cheese
18 slices pepperoni
3/4 cup cooked and crumbled sausage
1/4 cup grated parmesan cheese

In a medium bowl, whisk together the water, yeast, and sugar. Let sit five minutes, or until bubbly. Add the flour, oil, and salt, and mix until a dough forms. Knead gently, adding more flour as needed, to form a soft dough. Allow to rise for 30-60 minutes.

Preheat the oven to 450 degrees. Divide dough into 6 pieces. Roll each piece of dough into a circle. Spread two tablespoons of pizza sauce on one side of each piece of dough. Sprinkle with 1/3 cup cheese, top with three slices of pepperoni, and sprinkle with 2 tablespoons crumbled sausage. Pull the other half of the dough over the top of filling and seal the edges closed. Using a fork, pierce the top of the pockets once or twice to allow steam to escape. Brush the tops of the pockets with a little olive oil, and sprinkle with parmesan cheese. Bake 12-15 minutes, or until golden brown.

This giant donut cake is super easy to make, and so fun, too! Perfect for birthdays and special occasions!

I know, right?!? A cake that looks like a giant donut! It doesn't get much better than that! I made this gorgeous cake for my daughter Abby's family birthday party a few weeks ago, and it was a huge hit. I asked her what kind of cake she wanted in the days leading up to her birthday, and she was having a really hard time making a choice. We saw this super fun cake on Pinterest, and her mind was made up immediately. We as a family are kind of obsessed with The Simpsons, so Abby was thrilled to have her own "Homer donut" cake for her birthday. It was really easy to make, and I'm so happy with the way it turned out!

The key to making this cake look like a donut is the ring pan. I bought this one on Amazon, and it was good quality and very sturdy. The cake is just a variation of my never fail cake recipe (you can find other examples here, here, and here), and I just made a simple glaze to spread over the top. Add sprinkles, and you're all set! It was so much easier than many of my previous cake endeavors (like this rainbow cake that took me all night to bake), and such a fun cake!

Giant Donut Cake

for the cake:
1 1/2 cups flour
1 1/2 cups cake flour
1 3/4 cups sugar
2 1/2 teaspoons baking powder
1 teaspoon salt
1 cup butter, cold
4 eggs
1 1/2 cups sour cream or greek yogurt
2 teaspoons vanilla
1/4 cup sprinkles

for the frosting:
4 tablespoons butter, melted
2 cups powdered sugar
2-3 tablespoons half and half or milk
2-3 drops pink food coloring
2 tablespoons sprinkles

Preheat oven to 350. Grease and flour a 10 inch ring pan. In a large bowl or a the bowl of a stand mixer, whisk together the flours, sugar, baking powder, and salt. Grate the cold butter into the bowl, and mix until the mixture resembles coarse crumbs. Add the eggs one at a time, beating well after each addition. Combine the sour cream and vanilla in a measuring cup, and add about half of the sour cream mixture to the flour mixture. Beat until well blended and smooth. Add the other half of the sour cream mixture, and beat until smooth. Gently fold in the sprinkles. Pour the batter into the ring pan, and spread into an even layer. Bake 30-35 minutes, or until the cake is golden brown on top, and a toothpick inserted into the center comes out clean. Let cool in pan for a few minutes, then invert onto a cooling rack to cool completely.

To make the frosting, in a medium bowl, whisk together the butter and powdered sugar. Add enough half and half to make a thick glaze that is about the consistency of honey. Add the food coloring and whisk to combine. Spoon the glaze over the top of the cooled cake, allowing it to run down the sides. Add the sprinkles on top, and enjoy!
