Can I make a confession? I think that in my whole life, I've only been to Red Lobster maybe twice. I see their commercials on TV all the time, but somehow we just never make it there when we're deciding where to eat. But anyway, even with only having visited the restaurant twice, I am completely enamored of their famous Cheddar Bay Biscuits. There are a million copycat recipes out there, but I've always been bugged that they all use Bisquick. I'm not a Bisquick hater or anything, but I don't usually have it on hand in my kitchen. I was so excited to find this recipe that uses just basic ingredients like flour and butter and salt. I think the time from seeing it on Pinterest to cramming a hot biscuit into my mouth was maybe 30 minutes, tops. And they did not disappoint! They are light and soft, with an amazing cheese and garlic flavor. They would go wonderfully with pretty much anything... grilled chicken, soup, salad, anything! I will definitely be making these again frequently!

Red Lobster Copycat Cheese and Garlic Biscuits
adapted from Cinnamon Spice & Everything Nice

2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon garlic powder
6 tablespoons cold butter, cut into small pieces
1 cup shredded cheddar cheese
3/4 cup buttermilk (or use the milk + splash of vinegar trick like I did)

2 tablespoons butter, melted
1/2 teaspoon garlic powder
1 teaspoon dried parsley

Preheat oven to 400. In a medium bowl, whisk together flour, baking powder, salt, and garlic powder. Cut in butter using a pastry blender or two knives, until the mixture resembles coarse crumbs. Mix in cheddar cheese, then add buttermilk. Stir until just combined. Drop large spoonfuls of batter onto a lightly greased baking sheet (I used an ice cream scoop and it worked great). Bake 14 to 16 minutes, or until lightly browned. Whisk together butter, garlic powder, and parsley, and brush over warm biscuits. Serve warm.
