I'm continuing my Christmas cookie series with these adorable Christmas Oreos! My Halloween Oreos were incredibly popular this year, so I figured it was high time for a Christmas version. They're just as cute as the Halloween cookies, and just as easy to make! I came up with five cute and colorful designs, and they all look so pretty together. I'll share instructions for each design below so you can make your own!

Christmas Tree Oreos

These Christmas tree Oreos are so simple, but totally stunning! I love that they are immediately recognizable, and really easy to make. I found the gold star sprinkles for the top at Michaels (for 99 cents - woot!) and used nonpareils for the ornaments. I really think any kind of sprinkles would work great for the ornaments, though. Don't forget to add the cute brown stem at the bottom!

Christmas Tree Oreos

8 Oreo cookies
6 ounces bright white candy melts
2 ounces green candy melts
8 gold star sprinkles
nonpareils or other sprinkles
1 ounce light cocoa candy melts

Prepare a baking sheet by lining with parchment paper. Melt the white candy melts in a microwave safe bowl at 50% power, stirring every thirty seconds, until completely melted. Dip the Oreos in the candy using a fork, coating them completely, then tap the fork on the side of the bowl a few times to shake off the excess candy. Gently place the Oreos on the prepared baking sheet. Let stand 5-10 minutes. Add the green candy melts to a disposable piping bag and microwave at 50% power, kneading every thirty seconds, until completely melted. Snip a small piece off the bottom of the bag, and draw a Christmas tree shape on the top of the cooled Oreos. Add the star sprinkles and nonpareils. Melt the light cocoa candy melts in a disposable piping bag, snip a small piece off the bottom, and pipe a tree trunk below the tree.

Snowflake Oreos

This snowflake Oreos are so elegant and pretty, and I think the white sanding sugar is the perfect touch! I've found that practice makes perfect when piping snowflakes, and they're actually easier to pipe than you might think. I added sanding sugar to each cookie immediately after piping the snowflake, because I was worried about the candy setting up in between cookies.

Snowflake Oreos

8 Oreo cookies
6 ounces light blue candy melts
2 ounces white candy melts
white sanding sugar

Prepare a baking sheet by lining with parchment paper. Melt the light blue candy melts in a microwave safe bowl at 50% power, stirring every thirty seconds, until completely melted. Dip the Oreos in the candy using a fork, coating them completely, then tap the fork on the side of the bowl a few times to shake off the excess candy. Gently place the Oreos on the prepared baking sheet. Let stand 5-10 minutes. Add the white candy melts to a disposable piping bag and microwave at 50% power, kneading every thirty seconds, until completely melted. Snip a small piece off the bottom of the bag, and pipe snowflake shapes on the top of the cooled Oreos. Sprinkle with the sanding sugar and let cool. Shake off the excess sanding sugar.

Christmas Light Oreos

I saw cookies with Christmas lights on them on Pinterest a while back, and I thought they would be such a fun idea for these Oreos! I used colorburst candy melts for the base, and I love the colorful flecks in there. The M&M's were surprisingly easy to cut in half (not like the pretzels - ha!), but you could also use candy-coated sunflower seeds if you prefer.

Christmas Light Oreos

8 Oreo cookies
6 ounces bright colorburst candy melts
2 ounces green candy melts
red, orange, yellow, green, and blue M&M candies, cut in half

Prepare a baking sheet by lining with parchment paper. Melt the colorburst melts in a microwave safe bowl at 50% power, stirring every thirty seconds, until completely melted. Dip the Oreos in the candy using a fork, coating them completely, then tap the fork on the side of the bowl a few times to shake off the excess candy. Gently place the Oreos on the prepared baking sheet. Let stand 5-10 minutes. Add the green candy melts to a disposable piping bag and microwave at 50% power, kneading every thirty seconds, until completely melted. Snip a small piece off the bottom of the bag, and pipe the strings for the lights on the top of the cooled Oreos. Pipe small dollops of green candy for the sockets of the lights, then place an M&M half, cut side down on top of each socket.

Santa's Belt Oreos

These Santa's belt Oreos are so funny and jolly! I love the little bit of sparkle from the gold sanding sugar. I buy most of my sprinkles at Michaels because they have a great selection with lots of different color options, and I'm pretty sure this shiny gold sanding sugar came from Michaels. These Oreos are so festive and cute!

Santa's Belt Oreos

8 Oreo cookies
6 ounces red candy melts
1 ounce black candy melts
1 ounce yellow candy melts
gold sanding sugar

Prepare a baking sheet by lining with parchment paper. Melt the red candy melts in a microwave safe bowl at 50% power, stirring every thirty seconds, until completely melted. Dip the Oreos in the candy using a fork, coating them completely, then tap the fork on the side of the bowl a few times to shake off the excess candy. Gently place the Oreos on the prepared baking sheet. Let stand 5-10 minutes. Add the black candy melts to a disposable piping bag and microwave at 50% power, kneading every thirty seconds, until completely melted. Snip a small piece off the bottom of the bag, and draw a black line across the middle of the red Oreos for the belt, then let cool completely. Melt the yellow candy melts in a disposable piping bag, snip a small piece off the bottom, and pipe a square for the belt buckle in the middle of the Oreo. Immediately sprinkle it with gold sanding sugar. Let cool, then shake off the excess sanding sugar.

Reindeer Oreos

I think these reindeer Oreos might be my favorite (mostly because I'm a sucker for anything with candy eyes!). The pretzels can be a little tricky to cut in half, but luckily you can just eat any of the pretzels that don't break neatly, so no one will be the wiser. I don't have any good advice for you except to be patient, and eventually you'll get the hang of it. The frustration is worth it for these cute little guys!

Reindeer Oreos

8 Oreo cookies
6 ounces light cocoa candy melts
8 pretzel twists, carefully cut in half to form antlers
8 red M&M candies
16 small candy eyes

Prepare a baking sheet by lining with parchment paper. Melt the light cocoa candy melts in a microwave safe bowl at 50% power, stirring every thirty seconds, until completely melted. Dip the Oreos in the candy using a fork, coating them completely, then tap the fork on the side of the bowl a few times to shake off the excess candy. Gently place the Oreos on the prepared baking sheet. Dip the end of the pretzel twists into the candy melts, then stick to the sides of the Oreos to form antlers. Add two candy eyes to each Oreo, and 1 M&M for the nose.

My kids lucked out with a full week off school for Thanksgiving this year, and we are celebrating by heading to the coast for a much needed vacation! We don't have any family in town to celebrate the holiday with, so I'm opting for the laziest route possible and picking up a pre-made Thanksgiving dinner for us at the grocery store. I'm looking forward to a full week of lazy reading, playing board games as a family, and sitting on the beach watching the waves roll in. It has been quite a busy fall for my family, and I can't wait to just do nothing!

With Thanksgiving so late this year, it feels a little like Christmas is sneaking up on us, so I've been trying to get a head start on my holiday posts this year. I have some really fun cookies to share with you this week, and on Sunday I'll share a roundup of all of my favorite cookies to use for those holiday cookie plates! These vanilla almond shortbread cookies are an old favorite at my house, but since my original recipe for them has vampire fangs, I decided they needed a little facelift in time for Christmas. I pulled out my trusty cookie stamp and got baking!

My cookie stamp was a gift, but I'm pretty sure it was from Crate & Barrel. I've also seen cookie stamps at World Market. You could easily press these cookies using the bottom of a glass instead, but I love that the cookie stamp adds a cute and festive touch! To make the impressions stand out a little more, sprinkle the baked and cooled cookies with powdered sugar, then lightly brush them off so the sugar stays only in the depressed areas. These cookies are so adorable!

Vanilla Almond Shortbread Cookies

1 cup butter
3/4 cup sugar
1 egg yolk
1 teaspoon vanilla extract
1 teaspoon almond extract
2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt

Preheat the oven to 375. In a large bowl or the bowl of a stand mixer, cream together the butter and sugar until light and fluffy. Add the egg yolk, vanilla, and almond, and mix until combined. Mix in the flour, baking powder, and salt, until just combined. Shape the dough into golf ball-sized balls, and place on a lightly greased baking sheet. Stamp with a cookie stamp dipped in powdered sugar (or flatten with the bottom of a glass). Bake 10-12 minutes, or until lightly golden brown. Let cool and dust with powdered sugar, if desired.

When it comes to desserts, chocolate and hazelnut is one of my favorite flavor combinations! The flavors play off each other so well, and I love how sophisticated they taste together. This fall I bought a giant bag of hazelnuts at a local farm, and I've had fun experimenting with some new dessert recipes featuring my favorite little nut. I'm hoping to make some homemade nutella soon, and possibly even a chocolate hazelnut torte (yum!). These chocolate hazelnut shortbread cookies are a great way to showcase those flavors, and I love that they're so simple and easy to make!

I used my favorite shortbread base (from my honey lavender shortbread cookies) but tweaked it a little to bring out more of the chocolate and hazelnut flavor. The result was these delicious buttery cookies with the perfect crisp texture! They get a nice little crunch from the chopped hazelnuts, and the combination with the creamy milk chocolate is completely delicious. I just chopped up part of a Trader Joe's milk chocolate bar to use for my chocolate, but feel free to use whatever chocolate is your favorite!

These cookies actually keep really well, so they're perfect for mailing to family or friends who are far away. They also look great on a cookie tray, or packaged up in a cellophane bag as a neighbor gift. They're completely delicious!

Chocolate Hazelnut Shortbread Cookies

1 cup butter, softened
1/2 cup sugar
1 tablespoon milk
1 teaspoon vanilla
2 cups flour
pinch of salt
4 ounces milk chocolate, chopped fine
1/2 cup hazelnuts, chopped fine

In a large bowl of the bowl of a stand mixer, cream together the butter and sugar, until light and fluffy. Mix in the milk and vanilla until well combined. Add the flour and salt, and mix until blended. Stir in the milk chocolate and chopped hazelnuts until well blended. Place two sheets of plastic wrap or parchment on the counter and divide the dough in half between the sheets. Using the wrap, shape the dough into 2 round logs that are approximately 1 1/4 inches in diameter. Freeze thirty minutes or refrigerate 2+ hours, or until firm.

When ready to bake, preheat the oven to 325. Remove the dough from the fridge or freezer and slice into 1/4 inch slices. Place 1-2 inches apart on a lightly greased or parchment lined baking sheet. Bake 15-20 minutes, or until light golden brown. Let cool completely before serving.

Cheesy Scalloped Potatoes

No holiday meal is complete without a side of potatoes, right? I've already got a couple of fantastic recipes for mashed potatoes, and this delicious recipe for cheesy potato casserole, but why not add another great recipe to the bunch? (After all, it's impossible to have too many delicious potato recipes.) These scalloped potatoes are easy to make, and so cheesy and delicious. The potatoes are so tender, and the cheese sauce is to die for! 

To make these delicious potatoes, you'll just thinly slice some red potatoes, whip up a quick cheese sauce on the stove, and then layer potatoes, sauce, and cheese three times in a baking dish. In the oven, it all combines into a creamy, cheesy pan full of deliciousness! My scalloped potatoes usually take around 70-80 minutes to cook completely, but it's a good idea to check the potatoes with a fork to make sure they're tender. If the sauce seems very watery, cook the potatoes for a few minutes more to thicken it up. These scalloped potatoes are the perfect complement to my slow cooker brown sugar ham, but they're also delicious with chicken or turkey. They are a must have on your holiday table!

Cheesy Scalloped Potatoes

6 medium red potatoes, sliced thinly
2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
1/2 cup chicken broth
1/4 cup half and half
1 teaspoon salt
1/4 teaspoon pepper
1 3/4 cups cheddar cheese, divided

Preheat the oven to 350. Spray a 9 x 9 baking dish with cooking spray and set aside. Melt the butter in a large skillet over medium heat. Whisk in the flour and cook, stirring occasionally, until golden brown. Slowly add the milk, followed by the chicken broth, while whisking constantly to prevent lumps. Cook until thickened and starting to bubble. Remove from heat and stir in the half and half, salt, pepper, and 1 cup of cheddar cheese. Layer 1/3 of the potatoes in the bottom of the prepared dish. Pour 1/3 of the sauce over the top and spread to cover. Sprinkle 1/4 cup cheese over the top. Repeat twice with remaining potatoes, sauce, and cheese. Cover with foil and bake for 50 minutes. Remove cover and bake 20-30 minutes, or until golden brown and bubbling. Let stand 15-20 minutes before serving.

Are there any foods that immediately make you think of the holidays? For me, cheeseball is one of those foods. My mom frequently made cheeseballs for Thanksgiving and Christmas when I was growing up, and they were always one of my favorite parts of our holiday spread! It wasn't until I grew up and made my own cheeseball for the first time that I realized just how simple they are to make, I love that it's a delicious crowd-pleasing appetizer that takes less than 5 minutes to put together. I decided to add some flavor to my cheeseball with bacon, cheddar, green onions, and garlic, and they all combined into a creamy ball of deliciousness!

This savory and flavorful bacon cheddar cheeseball is so easy to make, and so delicious. It's the perfect party appetizer!

I always roll my cheeseball in chopped walnuts, and I love that they add some nice texture and flavor to the cheeseball. If you're not a fan (or have a nut allergy to work around), you could roll the cheeseball in everything bagel seasoning (yum!), additional grated cheddar cheese, or even just leave it plain. I usually serve it with a variety of crackers, but wheat thins are my top favorites for cheeseball. (I don't like them any other time, but wheat thins and cheeseball are a match made in heaven!) This bacon cheddar cheeseball is the perfect addition to your holiday table!
Bacon Cheddar Cheeseball

2 (8 ounce) blocks cream cheese
1 cup cheddar cheese
4 slices bacon, cooked and crumbled
1/4 cup chopped green onions
2 teaspoons garlic powder
2 teaspoons Worcestershire sauce
1 cup chopped walnuts

Add the cream cheese, cheddar, bacon, green onions, garlic powder, and Worcestershire to a medium bowl and mix well. (I find it easiest to use my hands to mix everything together.) Shape the cream cheese into a ball shape, and roll in the chopped walnuts, coating the outside. Refrigerate at least 30 minutes, or until ready to serve.

Chicken Cordon Bleu Pasta

Are you more of a menu planner or a fly-by-the-seat-of-your-pants type cook? I aspire to be a great menu planner, but usually only end up planning a menu and grocery shopping about every other week. On the off week, we usually just cobble together odds and ends from the pantry and cupboard, catch up on meals I didn't make from the week before, and/or eat out. As much as I would love to be organized enough to plan a menu every single week, I like having a little more flexibility than that, and we tend to have so much food in the fridge and pantry anyway that it's a good way to rotate through our stash. This chicken cordon bleu pasta is one that I make frequently in those in-between weeks. I almost always have cooked chicken and ham in the freezer, pasta in the pantry, and cheese and milk in the fridge, so it's a no brainer to throw everything together into a cheesy and filling pasta dish!

My kids always ask for seconds when I make this pasta, and I love that it's so simple and delicious! The combination of tender chicken and ham with a creamy swiss cheese sauce is fantastic. It's ready in less than 30 minutes, which makes it perfect for a busy night (as all of my weeknights seem to be lately). It's one of our go-to meals!

Chicken Cordon Bleu Pasta

8 ounces rotini pasta
2 tablespoons butter
2 tablespoons flour
1 cup chicken broth
1 cup milk
1 teaspoon salt
pepper (to taste)
1 cup grated swiss cheese
1 1/2 cups chopped cooked chicken
3/4 cup chopped ham

Cook the pasta according to the package directions and drain. While the pasta is cooking, in a large skillet, melt the butter over medium heat. When the butter is melted, whisk in the flour to form a paste. Let cook 2-3 minutes, until golden. Gradually add the milk, whisking so there are no lumps. Let cook for a few minutes until thickened, then gradually add the chicken broth, continuing to whisk constantly. Whisk in the salt and pepper, then let the mixture cook for a few minutes, until thickened to desired consistency. Remove from heat and whisk in the swiss cheese until melted. Return to heat and stir in the chicken, ham, and cooked pasta, until warmed through.

Do you love a good scone as much as I do? I grew up in Utah, where "scones" are pieces of fried bread dough, usually topped with honey butter. I had never even tried a traditional scone until I was fully grown up, and it was a little strange to me that these crumbly little biscuit-like scones shared the same name as the fried bread of my childhood. I've developed a deep appreciation for real scones since then, and I try to make some variety of scone at least once or twice a month. They are such a joy with a cup of warm hot chocolate or tea, especially when it's cold out. I've made a wide variety of scone flavors, from lemon poppyseed to peaches and cream, and I love them all. These cranberry orange scones are a new variation that I tried recently, now that fresh cranberries are in season, and they have quickly become a new favorite!

Cranberries are a great choice for scones because they add a lot of flavor, but don't add a ton of moisture. I bumped up the sweetness in the scones a little to compensate for the tartness of the cranberries, and the flavors are so good together. There's some citrusy sweetness from the orange, the bright and tart cranberry flavor, and the underlying sweet and tender scone dough. I like to brush them with cream before baking so they brown a little bit in the oven, and they're crisp on top but still soft and tender in the middle.

To make these scones even more delicious, I drizzled a sweet orange glaze over the top to finish them. It's not strictly necessary, but it does add a nice little boost of orange flavor! These scones are perfect for breakfast, dessert, or snacking any time. They're the perfect blend of sweet and tart, and the texture is perfect!

Cranberry Orange Scones

for the scones:
1/2 cup sugar
zest of one orange
2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup butter, cold
1/2 cup half and half
1 egg
1 teaspoon orange extract
1 cup fresh cranberries, cut in half
2 tablespoons cream
sparkling sugar

for the glaze:
2 tablespoons orange juice
1 cup powdered sugar
1-2 teaspoons half and half

Preheat the oven to 400. Line a baking sheet with silicone or parchment. In a large bowl, rub the sugar and orange zest together until fragrant. Whisk in the flour, baking powder, and salt. Grate the cold butter into the flour mixture and toss to combine. In a small bowl or measuring cup, whisk together the half and half, eggs, and orange extract. Pour the wet ingredients into the dry ingredients, and mix until the dough just starts to come together. Gently fold in the cranberries, being careful not to crush them.

Pat the dough out into a 8 inch square, being careful not to overwork it. Cut 9 circles out of the dough using a biscuit cutter, and place on the prepared baking sheet. Brush with the cream and sprinkle with the sparkling sugar. Bake 18-20 minutes, or until golden brown. To make the glaze, whisk the orange juice and powdered sugar together. Add the half and half as needed to make a glaze that's easy to drizzle, but not too runny. Drizzle the glaze over the scones.

I can hardly believe that Thanksgiving is only a few short weeks away! Since we moved to Portland a few years ago, my family has had a tradition of celebrating Thanksgiving with my nephew Alex and his wife Suzie. They're foodies like we are, so they always bring something delicious to share, and we have enjoyed several glorious feasts together. I had never cooked a Thanksgiving dinner on my own before we moved, but I quickly built up a collection of delicious and easy recipes that got rave reviews from everyone at the table.

This summer Alex and Suzie moved to New York for graduate school, and we are missing them so much with the holidays approaching! Since we'll be spending Thanksgiving on our own with no family close by, we decided to change things up and rent a beach house at the coast for the week. I've let myself off the hook for cooking anything this Thanksgiving (I think we'll pick up a pre-made Thanksgiving dinner at the grocery store, or go out to a restaurant for dinner), but I still wanted to share some of my favorite Thanksgiving recipes with you.
