Instant Pot Lemon Rice

Can you believe I've never actually made white rice in my Instant Pot? I use it almost daily, and it's my go-to for brown rice, but somehow I've never actually gotten around to cooking white rice in it. I used the rice function for the first time while I was making this lemon rice, and it turns out it's pretty simple and quick. I've never been great at cooking rice on the stovetop (somehow it just never turns out the way I want it to), but using the Instant Pot makes it so easy to do! This lemon rice has the perfect fluffy texture, and a delicious and bright lemon flavor. It's the perfect side dish for the greek chicken skewers I shared earlier this week, but it also works wonderfully as a side dish for grilled fish or seafood.

I added a little turmeric to the rice to give it a prettier yellow color, but if you're not a fan, you can definitely choose to leave it out. This rice reheats really well, and also freezes well, so feel free to double or triple the recipe and save the rest for another day. This lemon rice is the perfect side dish!
Instant Pot Lemon Rice

1 1/2 cups chicken broth
1 tablespoon butter
zest and juice of one lemon
1 teaspoon salt
1/4 teaspoon turmeric
1 1/2 cups long grain white rice

Add the chicken broth, butter, lemon, salt and turmeric to the Instant Pot. Cook the broth mixture on the sauté setting until the butter is melted and the broth is warm. Stir in the long grain rice, cover, and set the lid to seal. Cancel the sauté setting, and use the rice setting of the Instant Pot, or cook on manual for 12 minutes at low pressure. Let the pressure naturally release, then fluff the rice with a fork before serving.

When my husband and I were first married, we discovered the most delightful little Greek restaurant close to our house. It quickly became one of our favorite places to eat, and we often stopped by for a chicken souvlaki plate with lemon rice and tzatziki on the side. I had never tried Greek food before, (and I have no idea how authentic it was), but I loved the combination of flavors. Now that I live a few states away, I've been missing their delicious souvlaki, and decided to make my own version at home. It's not exactly the same, but it's just as tender and flavorful as the chicken I remember, and the bonus is that it's so easy to make at home. I made my own lemon rice to go with it (recipe coming soon!) and it was a delicious meal that everyone in my family loved!

To make the chicken, you whisk together a quick lemon and yogurt marinade, then let the chicken sit in it for about an hour. The marinade adds a ton of flavor and makes the chicken extra juicy and tender. Next, you'll thread the marinated chicken pieces onto skewers. I cooked my chicken in the oven because it was pouring outside and I had no desire to be sopping wet, but feel free to cook the skewers on the grill if you would prefer.

Greek Chicken Skewers

2 pounds boneless, skinless chicken breasts
zest and juice of one lemon
2 tablespoons olive oil
2 teaspoons minced garlic
2 teaspoons dried basil
2 teaspoons dried oregano
2 teaspoons dried parsley
1 teaspoon salt
1/2 cup plain greek yogurt

Cut the chicken breasts into bite sized pieces. In a medium bowl, whisk together the lemon juice and zest, olive oil, garlic, basil, oregano, parsley, salt, and yogurt. Mix the chicken pieces into the sauce and toss to coat completely. Cover and refrigerate for one hour. While the chicken is marinating, soak wooden skewers in water to soften them up and prevent burning. After the chicken has marinated, preheat the oven to 400. Line a baking sheet with foil or parchment, then place a cooling rack on the baking sheet and spray with cooking spray. Thread the chicken onto the prepared skewers, and place them on the prepared baking sheet. Cook 15 minutes, then flip and cook an additional 10-15 minutes, until cooked through.

If there's one kind of cookie I make the most, it is definitely chocolate chip cookies. They are my favorites for so many reasons! They're quick to make (I can have hot cookies fresh from the oven in under 30 minutes), they're easy, and I always have all of the ingredients on hand. Plus, they taste amazing!

I make my classic chocolate chip cookies frequently, but occasionally it's fun to mix things up a little and mix in some new flavors. These coconut chocolate chip cookies are always a favorite at my house, and for good reason. The coconut adds some chewiness and sweetness to the dough, and the combination of coconut and chocolate is phenomenal!

The dough for these cookies is so simple to mix up. You don't even need a stand mixer! I've mixed them by hand plenty of times, and it's just as simple and quick as pulling out the mixer. I used my biggest cookie scoop (almost the size of an ice cream scoop) to scoop these cookies, and I love how big and luscious they are. They get crisp around the edges, while the inside stays soft and gooey.

Coconut Chocolate Chip Cookies

12 tablespoons butter, melted
1 cup brown sugar
1/2 cup sugar
1 egg + 1 egg yolk
1 teaspoon coconut extract
2 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups chocolate chips
2 cups shredded sweetened coconut, divided

Preheat the oven to 350. Line a baking sheet with parchment or silicone. In a large bowl or the bowl of a stand mixer, mix together the butter, brown sugar, and sugar. Add the egg, egg yolk, and coconut extract, and mix until combined. Add the flour, baking powder, and salt, and mix to form a soft dough. Gently fold in the chocolate chips and 1 1/2 cups of the coconut. Scoop the dough onto the prepared baking sheet using a large cookie scoop (I used this 3 tablespoon scoop). Sprinkle with the remaining coconut. Bake 12-13 minutes, or until the coconut is lightly browned and the cookies are browned around the edges.

If my husband had his way, we would eat pastries for breakfast every single morning. He can never say no to a good pastry, so I've been working on some recipes for homemade pastries that I can make for special breakfasts. It turns out that they're actually much easier to make at home than I had expected, but just as delicious as store-bought. These cherry pie pastries are one of our favorites, and my husband requests them frequently for weekend breakfasts. They are so good!

The best part about these pastries is that they're so simple to make. I've included directions below for making your own cherry pie filling, but if you're in a huge rush (or just feel like being lazy), you could easily use canned pie filling instead. Let your puff pastry sheet thaw according to the package directions, then roll it out and cut it into six equal pieces. Cut an L shaped slit in two opposite corners of each piece.

Spoon about two tablespoons of cherry pie filling into the center of each puff pastry square...

... then fold the corner pieces you cut previously over to the opposite corner. This will create a little dam so that the cherry pie filling doesn't spill out everywhere while you bake the pastries. Brush the edges with egg wash and sprinkle with sanding sugar, and then you're ready to bake.

Bake the pastries until the edges are golden brown and crisp, then let them cool on the baking sheet while you whip up the quick and easy glaze.

Cherry Pie Pastries

for the cherry pie filling:
2 cups fresh or frozen cherries, pitted
1/2 cup sugar
2 tablespoons corn starch
1/2 teaspoon vanilla extract

for the pastries:
1 sheet puff pastry, thawed
1 recipe cherry pie filling (above)
1 egg
1 tablespoon water
sanding sugar

for the glaze:
1 cup powdered sugar
1-2 tablespoons milk or half and half
1/4 teaspoon almond extract

In a small saucepan, stir together the cherries, sugar, and corn starch. Bring the mixture to a simmer over medium heat, stirring frequently. Cook 3-4 minutes, or until thickened. Remove from heat and let cool to room temperature.

Preheat the oven to 400. Line a baking sheet with parchment or a silicone liner. Roll the puff pastry out and cut into six squares. Cut an L shape about 1/2 inch from the edge of the pastry in two opposite corners of each square (see picture above). Put 2 tablespoons of the filling in the center of each square. Fold the cut edges over the top of the filling to the opposite corners of the pastry. In a small bowl, whisk together the egg and water. Brush the egg wash over the edges of the pastry and sprinkle with sanding sugar. Bake 15-20 minutes or until lightly browned, then let cool.

While the turnovers are cooling, whisk together the powdered sugar, milk, and almond extract, adding more or less milk as needed to reach desired consistency. Pour the glaze into a plastic bag or piping bag, snip a small piece off the corner of the bag, and drizzle over the cooled pastries.
