Pumpkin Cookies

2 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 1/2 cups sugar
1/2 cup butter, softened
1 cup pumpkin puree
1 egg
1 tsp vanilla extract

Preheat oven to 350. Spray baking sheets with nonstick spray. Mix flour, soda, baking powder, cinnamon, nutmeg, and salt. Beat butter and sugar in separate bowl, then add pumpkin, egg, and vanilla, and mix well. Beat in flour mixture gradually, then drop by tablespoons (or use a cookie scoop) onto baking sheets. Bake 15-18 minutes or until edges are firm.

These cookies are also pretty good (although a little too sweet for me) with glaze.


Glaze

2 cups sifted powdered sugar
3 T milk
1 T melted butter
1 tsp vanilla

Mix in a small bowl until smooth
